Owners Scott Emery and Scott Didier engaged award-winning architect Harley Graham to design this exceptional hotel. The pedestrian laneway has an abundance of greenery and high beams that create an inviting yet laid back entry and meeting spot. The harmonious blend of natural materials such as raw concrete and American oak wood showcase beautifully the hotel’s commitment to sustainability and the environment. Whilst calming toned marble and terracotta tiles complement the beauty of the surrounding nature. Every detail has been hand crafted to create one of the most elegant and luxurious yet welcoming hotels you’ll ever visit. “The ambiance shifts so wonderfully from day to night,” Emery says. “By day, the laneway exudes serenity, in among the abundance of greenery. Bonito, the hotel's exciting new restaurant led by chef Minh Le (The Foraging Quail, The Byron at Byron, Crystalbrook Byron) is incredible. With a passion for seafood and locally sourced fresh produce, Minh Le delivers a delectable dining experience. Oysters served with Japanese dressing and tobiko, Hiromasa Kingfish glazed with a spiced soy sauce and Petuna trout roe were just some of the flavoursome dishes we enjoyed during our stay. The banana sponge with lychees and coconut sorbet left us wanting more.
