Annie's Slice


4 oz butter - melted
1 cup brown sugar
1 cup SR flour - generous
1 large egg
1/2 cup desiccated coconut
1/2 cup chopped dates apricots & sultanas (generous)
Pinch of salt


Mix dry ingredients in a bowl with spatula, add melted butter first and mix well then add beaten eggs and vanilla (I add vanilla to beaten eggs)
Mixture will be quite moist. 
Spread in a shallow tin for 22mins mod oven - 160 fan forced or 180 if not 
Let cool in tin before cutting into squares 

Annie's Tips

I double this recipe every time as it’s so good and it freezes so well. I use a lamington tin 30x24cm (double mixture) 
The trick is don’t over cook it.
